In Civil service exam , you will have to choose two optionals.
UPSC provides a long list of optionals to chose from, which covers almost all of the bachelor fields courses, so you can do your graduation in whatever field you like.

You can see the list of optional here:

Dear freind i like your thinking,it is good to think from right now for a bright career.IAS exam is conducted by upsc, ias paper consists of two sets one written test and other one is personal interview. The whole process of selection take one year, intreview test are conducted for only those who will pass written test. There are many courses through which you can give ias exam, the best way is to pursue a graduation in any course of your interest and then give from that subject ias paper.Foi ias graduation is must.some subjects are listed here-chemistry,physics,maths,geography,botany,zoology,h istory of India and many other subjects are there. But you must analyse your interest in subject.Good luck!

Re: Which subjects are necessary to become an IAS officer?

UPSC offers a long list of subjects, so dont worry about optional subjects.
The most important if General awareness & current affairs, current affairs are getting more importance in last years.
It will also help you in Interview.
So, for subjects, its better to keep one subject which yo have studied in graduation & another chose according to ur interest.
But still public Ad & geography are some good scoring optionals.
